Dried out pastry

A recurring problem in refrigeration cabinets, cupboards and deep freezing is the drying out of cakes. This is easily detected by the drying out of whipped cream, jellies and dried out fruits.
This can be caused by leaving the storing the pastry for too long (causing it to get old) or by ventilators turning too fast, causing a velocity that is too high, in combination with an evaporator that is too small. An small-sized evaporator in the cooling engine can cause cream pastry to attract an unpleasant smell and develop an nasty taste. The unpleasant smell is caused by a contaminated air circulation.
Cleaning
When cleaning a chilled cabinet, refrigerator or freezer don't forget to clean the ventilator and evaporator. The evaporator makes sure that the contaminated smell is absorbed and the ventilator will blow the contaminated air over the pastry. Check your chilled cabinets, refrigerators and freezers every day, to prevent this from happening. We also recommend thoroughly cleaning chilled cabinets and refrigerators once a week, to prevent mold. Finally always keep an eye on the shelf life of cream pastries!
